SUNTORY TOMI NO OKA WINERY "From the Site of Viticulture"
―"Fine wine from fine grapes" Biodynamic initiatives

We have been working on biodynamic cultivation at the TOMI NO OKA WINERY since 2008.
We would like to propose a new and appealing style of wine to customers based on the belief in "fine wine from fine grapes," with the hope of evolving viticulture more than ever before.

What is biodynamic cultivation?


Biodynamic cultivation emphasizes the ecosystem surrounding the vineyard; farming with the aim of drawing out the essential natural energy in the soil and grapevines, including the relative positioning of celestial bodies. It incorporates the following specifically.
-Carrying out the work in alignment with the movements of the celestial bodies
-Using a preparation to draw out the vital energy of the soil and grapevines
-Cultivating without the use of chemical pesticides (natural pesticides are acceptable) or chemical fertilizers


On April 19, 2016, for example, we spread a Maria Thun’s barrel compost (preparation) on the vineyard. The Maria Thun’s barrel compost comprises egg shells, basalt (volcanic ash), seven kinds of plants, and cow manure mixed together. The mixture is then fermented for several months. It promotes the activation of microorganisms in the soil and enhances the performance of the soil.
Why April 19?
We refer to the farmer's almanac known as a sowing and planting calendar as we do our work, and April 19 is said to be the optimal day for preparation that you spread on the soil, and we carry out our work in alignment with the movements of the celestial bodies. (The day varies according to the year.)



We agitate the Maria Thun’s barrel compost and well water for one hour. Both the agitation and spreading are done by hand, without using machines.



We finished spreading the preparation smoothly, the grapes have grown steadily during the summer, and we welcomed the October harvest. We will continue to propose an appealing style of wine to customers with grapes that have drawn out the essential natural energy in the soil and grapevines.
